This week, our church was taken over by Vacation Bible School (or VBX-treme for the preteens)! It is a highlight of the summer for our family. The tradition is to have Family & Friends Night on Thursday night of VBS/VBX week and invite every family to come and have a great night of food, fun, and games (including an old-fashioned cake walk—yummy!!)
After making this recipe for one of my donations for the Cake Walk, I decided that you needed to know about it. If you don’t already have this recipe in your collection, you MUST have it!!

Sopapilla Cheesecake
1 stick butter
2 cans Crescent Rolls
3 (8 oz.) packages cream cheese, softened
Granulated Sugar
Cinnamon
In a 9”x13” pan, spread out 1 can of Crescents in one sheet (they make the solid sheets now instead of having to smush all of those triangles together. GREAT idea!!). Mix softened cream cheese and 1 1/2 cups sugar together and spread over Crescent sheet. Spread the second can of Crescents over the cream cheese. Melt 1 stick of butter and pour over Crescents. Mix 1/2 cup of sugar with cinnamon and sprinkle over the melted butter. Bake at 350 degrees for 30-35 minutes. Store leftovers in the refrigerator.
This recipe is delicious served warm or cold!! You could also serve it cold topped with fresh strawberries or blueberries. A perfect summer “sweet”

Just a tip, Pastors Rocky and Larry LOVE this recipe! I made each one of them their own pan during the week of VBS as well as made one for the volunteers. Always a favorite wherever I take it!
