Finally, It’s Fall

We live in Texas. It’s HOT in Texas!! There is no such thing as 4 seasons. We have 2 seasons: HOT and NOT SO HOT. And this year, we added a 3rd season (mid-August through mid-September)…SPONTANEOUS COMBUSTION! Summer of 2010 will go down in my family as the Summer-That-Wouldn’t-End!! Just early last week, we had temps in the upper 90s! Ca-Razy!!

Finally, this week, we had a taste of Fall. Our highs have only been in the 80s. Fall decorations are popping up everywhere in our “Mayberry”. Gorgeous!!

Pumpkin Happy Fall

Time to de…co…rate and bake some delicious Fall-like desserts!!

One of our favorite recipes to enjoy this time of year is a recipe from my friend Kim in South Carolina. I hope you enjoy it as much as we do.

Margaret’s Pumpkin Cake

2 C. sugar 1 tsp. baking powder

1 C. butter, melted 2 tsp. cinnamon

2 C. flour 1 (16-oz.) can pumpkin

1/2 tsp. salt

Icing:

1 stick butter, softened 1 box powdered sugar

8 oz. cream cheese, softened Dash of vanilla

Preheat oven to 325 degrees. Combine 4 eggs, sugar, melted butter, and beat well. Add flour, salt, baking soda, baking powder, and cinnamon and mix well. Mix in pumpkin. Butter and flour cake pans. Bake 25 to 30 minutes for small cake pans or 50 minutes for a bundt pan. Cool cakes and ice. To make icing: Mix together butter, cream cheese, powdered sugar and vanilla.

This is the perfect fall dessert!

  1. Hi Lucy, thanks for sharing this pumpkin cake recipe, I will try it! I wish I could say the same thing here about the weather..in the Midlands in England, it has been cold and wet. Still this afternoon, the sun came out! Have a blessed end of week.

  2. That sounds wonderful! And any frosting that contains cream cheese is a winner in my book! :)
